Quinoa Salad Recipe:

Water 1.25 liter
Salt ½ table spoon
Mint tea 1 bag
Quinoa 454 g ( 1 lb)
Red bell pepper 1cup
Yellow bell pepper ½ cup
Orange bell pepper ½ cup
Red onion ½ cup
Yellow onion ½ cup
Cucumber, deseeded 1 cup
Zucchini, deseeded 1 cup
Raisins 150g
Dried apricot 150g
Fresh Parsley, chopped ½ cup
Fresh mint, chifonade 1 cup
Salt 1 teaspoon

Ground black pepper ½ teaspoon
Juice of 3 fresh limes
Olive oil, 50 ml

Bring the water, with salt and a bag of tea to a boil. Add quinoa, cook for 12 min. Drain and let it seat and dry in a large open tray.

Cut all the vegetables in Brunoise (small cubes), set aside. Cut the apricots in thin strips.

Combine the Quinoa, cubed vegetables, apricot, raisin, chopped parsley, mint, seasoning. Add the lime juice and olive oil.
